Practical Sourdough is operated by Lefty23 (Pty) Ltd, registration number 2026/706220/07, a private company registered in South Africa and based in Cape Town. Its postal and physical address is available on request from [email protected] and is on the public CIPC register against that registration number. Under the Protection of Personal Information Act (POPIA), Lefty23 (Pty) Ltd is the responsible party for the personal information processed on this site. Its Information Officer is the director of Lefty23 (Pty) Ltd, registered with the Information Regulator under registration 2026-066332 and reachable at [email protected].

What this site collects

We use Umami, which we host ourselves, to count visits. It runs on every page of this site, it sets no cookies and it does not follow you between sites. Alongside the page view it records a few things you do here: which schedule, calculator or troubleshooting page you opened, and what you type into the search box on the troubleshooting index once you have typed three characters. Do not type personal information into that search box.

If you use the feedback prompt on a page, we receive the page you were on, whether you answered yes or no, the reason you picked from the list, anything you typed in the comment field, and your browser's user-agent string. It is reviewed by hand. Do not type personal information into it.

Both the analytics server and the automation server that receives the feedback are ours, and both run on hardware we rent from Hetzner in Helsinki, which is outside South Africa. Information held there is protected by the European Union's General Data Protection Regulation, which is the kind of law section 72 of POPIA requires before information may be sent out of the country.

Some things are saved only in your own browser's local storage and never reach us: the kitchen temperature, starter, oven and temperature unit you set on the Bake Planner, whether you have already answered the feedback prompt on a page, and whether you chose light or dark mode.

The site is served through Cloudflare, which keeps short-lived security logs including your IP address and stores them outside South Africa as our operator, which section 72 of POPIA permits.

We load no advertising, no third-party analytics and no third-party fonts. The fonts this site uses are served from this domain. The "add to Google Calendar" buttons on the schedule pages are ordinary links: nothing is sent to Google unless you click one, and if you do, the schedule you are exporting travels to Google in the link, under Google's own privacy policy.

If you email us, we keep the message for as long as it takes to answer it.

Your rights

Under POPIA you may ask what personal information we hold about you, ask us to correct or delete it, or object to how we process it. Write to [email protected] and we will answer within 30 days. If you are not satisfied you may complain to the Information Regulator at inforegulator.org.za.
